Sparkling Lime & Tonic Iced Coffee - Zesty, crisp and refreshingly different.

Who says coffee has to be hot, creamy or traditional?

If you're looking for a refreshing twist on your daily coffee ritual, our Sparkling Lime & Tonic Iced Coffee might just become your new favourite.

Combining the bold, rich flavour of espresso with the delicate bitterness of tonic water and a fresh squeeze of lime, this sparkling creation is the perfect balance of zesty, crisp and refreshing.

It's a little unexpected, wonderfully simple and made for those warm afternoons when your usual iced latte just won't cut it.

The best part? You only need a handful of ingredients and five minutes to create something that looks and tastes like it came straight from a specialty coffee bar.

Why coffee and tonic are a perfect match

It might sound like an unusual combination, but espresso and tonic water work surprisingly well together.

The natural citrus and fruity notes found in medium-roast coffee pair beautifully with the bright acidity of fresh lime, while the gentle bitterness and bubbles of tonic water create a light, refreshing finish.

The result is a sophisticated, sparkling coffee that's less sweet than your traditional iced coffee and full of character.

For this recipe, we recommend a medium-roast espresso that allows those delicate fruit notes to shine through.

What you'll need

  • 60 ml freshly brewed First Pour espresso, cooled (approximately 2 standard espresso shots)
  • 120 ml premium tonic water (try a botanical tonic for something extra special)
  • Juice of ½ fresh lime
  • Plenty of ice cubes
  • 1 slice of fresh lime, to garnish
  • 1 sprig of fresh mint, to garnish

Feeling adventurous? Swap the regular lime for fresh finger lime when it's in season. Those little bursts of citrus add an extra layer of flavour and texture.

Let's make it!

Step 1: Start with a little zest

Fill a tall glass generously with ice cubes. Squeeze in the juice of half a fresh lime to create that bright citrus base.

Step 2: Bring on the bubbles

Slowly pour 120 ml of chilled tonic water over the ice. Watch those bubbles come to life!

Step 3: Add the coffee magic

Gently pour your cooled espresso over the top of the tonic. Pour slowly, ideally over the back of a spoon, to create a beautiful layered effect.

Step 4: Garnish and enjoy

Finish with a fresh lime slice and a sprig of mint. Take a moment to admire your creation, then give it a gentle stir before sipping.

A little Pemberton Lane tip

The secret to a great espresso tonic? Cool your coffee quickly.

Rather than placing your freshly brewed espresso in the fridge and waiting for it to chill, try extracting your espresso directly over an ice cube.

This helps bring the temperature down quickly, preserving more of those beautiful coffee aromas and flavours.

You can also add an ice cube to your freshly extracted espresso, swirl gently until cooled, then pour it into your tonic.

For the best result, use chilled tonic water and plenty of fresh ice. And remember to pour slowly to keep those gorgeous layers intact.

Make it your own

One of our favourite things about coffee is how a few simple ingredients can create something completely different.

Want to experiment? Try adding a splash of grapefruit juice for a slightly more bitter citrus twist, swapping your regular tonic for an aromatic botanical variety, or adding a little extra fresh mint for a cooling summer finish.

There are no rules when it comes to finding your perfect coffee moment.

Your new afternoon moment awaits

At Pemberton Lane, we believe great coffee is about more than just your morning routine. It's about slowing down, trying something new and enjoying the little moments that make each day special.

Whether you're entertaining friends, enjoying a sunny afternoon or simply looking to shake up your usual coffee order, this Sparkling Lime & Tonic Iced Coffee is a refreshing way to enjoy your favourite beans.

So grab your espresso, slice up a lime and let the bubbles do the rest.
